    Ingredients needed to make homemade tomato sauce.

    • Tomatoes. Fresh tomatoes that are firm and flavorful such as roma. Your tomatoes should be rinsed and dried.
    • Salt. Use a large salt such as Kosher salt.
    • Basil Leaves. Fresh is preferred.
    • Optional add-ins, chopped onion, garlic, or Italian seasonings.

    1. To add garlic and/or onion to this recipe you will first need to sauté (function on your pressure cooker) with olive oil to sauté them until softened first.
    2. Fresh basil was used to make my sauce. You can alternatively use dried as fresh is not always available.
    3. Other herbs or seasonings that can be added to this recipe include oregano, black pepper, thyme, or rosemary. To thicken your sauce you can stir in a tablespoon of tomato paste..
    4. For an added kick, add a teaspoon or two of red pepper flakes or a bit of hot sauce.
    5. You can try this recipe using canned tomatoes however, your cooking time may vary.
    6. San Marzano tomatoes are canned tomatoes that are loaded with goodness and can make for a great tomato sauce.

    How to make 3 Ingredient Instant Pot Tomato Sauce

    Prep Time: 15 minutes .
    Pressure Cook Time: 20 minutes .
    Servings: 4 cups .

    1. Tomatoes. Place your cleaned tomatoes into your pressure cooker and use a potato masher or similar item to slightly crush them to break the skin.
    2. Cook. Seal your pressure cooker and cook on 'high pressure' for 10 minutes (it take about 10 minutes to come to pressure). Then manually release pressure when done.
    3. Mash. Use your potato masher to finish mashing the cooked tomatoes.
    4. Strain. To strain out the liquid from the pulp use a strainer that can fit on top of a bowl (you can save the liquid for something else).
    5. Process. Place the strained tomatoes along with your remaining ingredients and any additional desired seasonings in a food processor or good blender. Pulse the ingredients until your reach your desired texture.
    6. Finish. Use or store your sauce. There are instructions for canning your sauce below.

    Expert Tip👉 To thin out your tomato sauce you can add back some of your strained liquid as needed until your reach your desired texture.

    How to can homemade sauce for storage.

    While I am providing basic instructions below, it is always best to follow the manufacturers directions for the canning products you are using.

    1. Clean and sterilize your jars by washing them in hot, soapy water, rinsing them well, and then boiling them in a pot of water for about 15 minutes. (Make sure the jars are completely dry before filling them.)
    2. Once your sauce has fully cooled you can fill your jars. leaving ¼" of headspace at the top of the jar to allow the sauce to expand as it cools.
    3. After filling your jars with the sauce, wipe off any excess sauce from the rims with a clean, damp cloth to ensure a tight seal.
    4. Place the lids on your jars ensuring they are centered and flat. Then twist on the screw bands until they are “fingertip” tight. Avoid over-tightening the lids as air needs to be able to escape during the canning process.
    5. Place your filled jars back into the boiling water bath, ensuring they are covered with at least one inch of water. Refer to the manufactures' directions for boil times.
    6. When your jars have finished processing, remove them from the water using a jar lifter and allow them to cool on a rack for about 24 hours. Once fully cooled, check to ensure each jar has sealed properly by pressing on the center of the lid - if it pops up, it has not sealed and should be refrigerated and used first.

    How to store homemade tomato sauce.

    Once homemade sauce has fully cooled it can can be stored in a glass jar and refrigerated for up to five days. Frozen sauce can last up to four months (freezer bag, flat, and with headspace). Canned sauce should be stored in a cool, dry place as they can keep for up to a year when stored properly.

      I was wondering if in your opinion I could use the pressure cooking method to seal the jars after filling them instead of using the traditional hot water bath method?
