How to make Shrimp Taco Bites.
Prep Time: 20 minutes .
Servings: 24 individual bites .
- Shells. Preheat your oven to 350 and prep a mini muffin pan for nonstick (spray can work). Use a pastry brush or similar item to lightly brush each side of the wonton wrappers with olive oil. Then press each of the wrappers into the cups of your muffin pan, creating a cup shape.
- Bake. Place your muffin pan into your preheated oven and bake for 8-10 minutes, or until the wontons are crisp and golden brown around the edges. After sitting at room temperature for a minute, carefully remove the cups from the pan and transfer them to a wire rack to cool.
- Shrimp. Place your cleaned shrimp into a large bowl or zip top bag. Add the seasonings and toss the shrimp until they are all coated with the seasonings.
- Cook. Preheat a large skillet over medium-high heat. Add your remaining olive oil to the skillet and heat the oil for one minute. Then add your shrimp to the skillet, leaving space between each shrimp. Cook your shrimp for about two and a half minutes on each side or until done (light pink, opaque, and slightly firm to the touch).
- Crema. While the shrimp is cooling, you can make your crema. In a medium bowl, us a whisk to combine all of the ingredients. You can then refrigerate the crema while you assemble your bites.
- Assemble. Place each of your wonton cups on a rimmed baking sheet or flat work space. Place a small amount of the optional ingredients (such as cheese and lettuce) into the bottom of each cup, leaving space for the shrimp. Place a shrimp on top of the optional ingredients and then place a dollop of the crema on top of each of the shrimp.
- Serve. These bites are best when served warm.
Tips for making the best shrimp bites.
My bites were made with small (30-40 count) shrimp. Most 'large' shrimp could also work depending on the size or adjustments to the shrimp.
More helpful tips for you.
- Your shrimp should be defrosted if frozen, peeled, deveined, and tails removed for convenient serving and enjoying.
- Not a fan of wonton wrappers? You can try using fresh flour tortillas or even scooped shaped tortilla chips. There may be some adjustments needed with these alternatives.
- It is best to assemble these bites before serving to prevent the wrappers from getting soggy. You can prepare this in advance however, baking your cups and cooking your shrimp.
How to store leftover bites.
The assembled shrimp bites are best when served freshly made. You can however store the cooked shrimp for up to a couple of days refrigerated and cover and refrigerate the crema for up to five days.
