Tips for making the best slow cooker brisket.
When selecting a brisket, make sure that it can fit into your slow cooker. On average, a three to four pound brisket works for most slow cookers while larger slow cookers (such as a six quart) can go up to six pounds.
More helpful tips for you.
- Look for a well-marbled brisket, with a good amount of fat for a juicier and more tender brisket. You can also avoid using a brisket that has a lot of connective tissue.
- As far as the wood chips go, you can use about any wood chips that can be used in a smoker. For additional flavors, feel free to use a special chip such as hickory smoked chips or mesquite smoked chips .
- Feel free to adjust the seasonings in the rub as needed.
- For a smokier flavor, add a teaspoon (or two) of liquid smoke to the wood chips before putting them into the parchment envelope.
- Start checking your brisket about eight hours into slow cooking for tenderness. This will be your guide for how long you should cook it for.
- When your brisket is done slow cooking, let it set on your cutting board for 15 to 20 minutes before slicing it to allow for the juices to settle.

How to make Slow Cooker Smoked Beef Brisket
Prep Time: 20 minutes.
Slow Cook Time: 8-10 hours.
Servings: depending on the size of your brisket and how it is sliced.
- Prepare. If you have not done so, prepare your brisket by removing any strings and large pieces of fat. Then use a paper towel to blot off any excess moisture.
- Make the rub. In a small bowl, use a whisk to combined together the seasonings.
- Rub and Refrigerate. Use your hands to apply the rub into your meat. If necessary, you can wear food grade gloves to do so. Then wrap the brisket in plastic wrap and refrigerate it for at least a half hour to overnight so that the rub can set in.
- Prepare the wood chips. To prepare the wood chips, place them in a larger bowl and cover them with water. Let the chips soak in the water for 30 minutes and then strain the water from the chips. Wrap the strained chips in a parchment paper envelope and set the envelope, with the seam side down, in the bottom of the slow cooker. Use a toothpick to randomly poke holes into the parchment paper to allow the steam to escape while slow cooking.
- Slow cook the beef. Remove the plastic wrap from your beef and then place the beef on top of the parchment paper wrapped wood chips. Place the lid on your slow cooker and slow cook on low for for 8-10 hours without removing the lid (we want the flavored steam to go into the brisket and not escape).
- Serve. When your brisket in done slow cooking, carefully transfer it to a serving platter or cutting board to set for about 15 minutes. You can also discard the wood chip envelope when it is cool enough to touch. Slice the brisket and spoon the drippings from the bottom of the slow cooker over the brisket as desired for more moisture.
Expert Tip 👉 Use a meat thermometer to determine your level of “doneness” of your brisket.
• 120-125 degrees Fahrenheit for a rare brisket
• 130-135 degrees Fahrenheit for a medium-rare brisket
• 140-145 degrees Fahrenheit for a medium brisket
• 150-155 degrees Fahrenheit for a medium-well brisket
• 160-165 degrees Fahrenheit for a well-done brisket .
How to store brisket.
Once your brisket has fully cooled, it can be stored in an airtight container. When properly stored, brisket should keep for up to three days refrigerated as can the leftover juice. Brisket can also be frozen for up to three months. To reheat it, place the beef in a baking dish and add a few tablespoons of water in the bottom of the dish. Cover with tinfoil and place in an oven that has been preheated to 300 degrees Fahrenheit. Heat until warmed through.
