  • teaspoon Southwestern Seasonings
  • 1 tablespoon Vegetable Oil
  • 8 oz Chicken Breast - diced
  • 1 cup Monterey Jack Cheese - shredded
  • ¼ cup Corn - rinsed and drained
  • ¼ cup Black Beans - rinsed and drained
  • ½ cup Red Bell Pepper - diced
  • 8 Egg Roll Wrappers

Instructions

  • Start by cooking the diced chicken using your choice of method. If you are using a stovetop, in a large skillet with oil cook the chicken on medium heat until browned, stirring as needed (about 10 minutes).
  • Once the chicken has browned, you can carefully stir in the seasoning, corn, beans, chopped pepper, and onion. Cook this mixture for five minutes, stirring and flipping the ingredients while cooking. Then remove the skillet from the heat and stir in the cheese.
  • To prepare the wrappers, place the first wrapper on a clean flat surface, such as a cutting board, so that it resembles a diamond shape. Use your finger or a pastry brush to wet the edges of the wrapper. Then add about two tablespoons of the mixture from the skillet in the center of the wrapper.
  • Preheat your air fryer to 320. To fold up the wrapper, start by folding in the right and left corners of the wrapper. Then fold down the top corner and continue to roll roll the wrapper closed.
  • Spray the wrappers with oil and then place them into the air fryer basket, leaving room between egg rolls for the air to circulate.
  • Air fry the egg rolls for six minutes and then flip them over and cook for two minutes or until crisp. Allow the egg rolls to cool before serving.
