If you have not done so, you will need to peel and cook your potatoes. My potatoes were peeled and cooked whole in boiling water for 8-10 minutes until fork-tender. The refrigerate the potatoes for at least 20 minutes.
Next, shred your potatoes using a food processor or shredding method of choice. Then place the shredded potatoes in a large bowl.
Add the remaining ingredients, except for the oil, to the bowl with the potatoes and mix the ingredients to combine.
Use a large spoon or cookie scoop to scoop out the mixture and then press the ingredients into the shape of a tot (usually a cylinder shape).
Preheat your air fryer to 400.
Spray or brush the tots with your oil and then place them into the air fryer basket.
Air fry for seven minutes and then carefully flip them over. Continue to air fry until crisp on the outside (about six to eight more minutes depending on your air fryer).
Let the tots cool for a few minutes before serving as they will be hot in the center.
