Equipment

Ingredients

  • 1 cup Turkey -cooked, cooled, and cut into small pieces.
  • 1 cup Stuffing
  • 1 cup Potatoes -Mashed potatoes work best.
  • 1 Egg. -Whisked together with a tablespoon of water in a small bowl.
  • 8 Egg Roll Wrapper

Optional: seasonings like one of these, dipping sauces, and cranberry jelly.

Instructions

  • Prepare. Prep your ingredients as indicated. Also, remove the wrappers from the packaging. You can use a large cutting board or similar item as a workspace to prepare the wraps. Prep your basket as desired (I like to take mine out of the air fryer and give it a quick spray).
  • Combine. In a medium bowl, combine together your leftover food, lightly mixing them together.
  • Wraps. Start by laying out the first egg roll wrapper so that it resembles a diamond. Use a pastry brush or similar item to brush some of your egg wash over the wrapper and then place about two tablespoons of the mixture from the last step in the center of the diamond.
  • Fold. To fold up your wrapper, bring the bottom (or top) corner up to the center and then the two sides, rolling the wrapper into an egg rolls. Brush the egg wash as needed to help you seal the wrapper around the ingredients. Place the egg roll with the seam side down into your air fryer basket and repeat with the remaining egg rolls.
  • Air Fry. You can give your egg rolls a quick spray with oil if desired. Air fry at 375 for 10 minutes and then carefully flip the egg rolls over and cook until golden brown and crisp, about three to three and a half minutes.
  • Serve. You can serve your egg rolls with cranberry jelly, gravy, or the sauce or dip of your choice.
