Ingredients

  • 8 oz Bacon. - Uncooked bacon cut into smaller pieces¼-1/2".
  • ¼ teaspoon Salt
  • ¼ teaspoon Pepper
  • 1 teaspoon Brown Sugar
  • 1 cup Mayonnaise.
  • 1 teaspoon Garlic. -Freshly minced
  • 1 tablespoon Lemon Juice. -Freshly squeezed

Instructions

  • Bacon. In a skillet over medium heat, cook your bacon until it turns golden brown. Then carefully remove any excess fat from the skillet (you can keep a small amount). Stir in the brown sugar and seasonings (salt and pepper) and stir with a wooden spoon until the brown sugar has fully dissolved. Then remove the skillet from the heat.
  • Other ingredients. Place your mayonnaise, minced garlic, and lemon juice into a blender or food processor. Give the ingredients a few pulses to get them started.
  • Blend. Add the ingredients from the skillet to your blender or processor, reserving a couple of tablespoons of the bacon to be used as a garnish. Blend the ingredients until smooth or until you have reached your desired texture.
  • Serve. Transfer your aioli to a bowl for serving or to a covered jar for storing in your refrigerator.
