Equipment

Ingredients

Nachos

  • 16 oz Tortilla chips
  • ½ cup Ground Beef --pre-cooked and drained
  • ½ cup Black Beans --rinsed and drained.
  • ½ cup Tomatoes - diced.
  • ½ cup Black Olives --sliced
  • ½ cup Pickled Jalapeño --slices
  • ¼ cup Red Onion. --Diced into small pieces.
  • ¾ cup Cheddar Cheese -- shredded
  • ¾ cup Monterey Jack Cheese -- shredded
  • ¼ cup Sour Cream.

Cheese Sauce

Instructions

  • Prepare. Line a rimmed baking (with parchment paper, foil, or a baking mat) and then give that a spray with nonstick or oil and evenly place your chips over that. Also, preheat your oven to 400°F.
  • Sauce. To make your cheese sauce, start by melting your butter in a saucepan over medium heat and then add the flour to the saucepan and whisk the ingredients constantly to create a roux (about on to two minutes for it to become a light golden color). Gradually pour the milk into the saucepan while continuing to whisk, and cook until the mixture thickens (two to three minutes). Reduce the heat to low and whisk in your remaining ingredients (cheese and seasonings). When the cheese has melted you can carefully pour your sauce over the chips.
  • Layer. Layer the cheese sauce with the black beans, diced tomatoes, sliced black olives, pickled jalapeño slices, and diced red onion evenly over the nachos.
  • Beef. Layer the ingredients with your cooked ground beef and then sprinkle the cheddar cheese and Monterey Jack on top.
  • Bake. Place your sheet pan into your oven and bake until the cheese is melted and bubbly, and the nachos are heated through (about five to ten minutes).
  • Drizzle. Allow the nachos to cool for a couple of minutes and then drizzle your sour cream on top and serve.
