Ingredients

  • 32 oz Potatoes - Shredded potatoes or a 30-32 oz bag of shredded hash browns like the frozen kind.
  • 1 lb Breakfast Sausage -The breakfast sausage should be browned, crumbled, with excess fat drained.
  • 12 Eggs
  • 1 Bell Pepper - Stem and seeds removed and then chopped or diced small.
  • 2 cups Cheddar Cheese -Shredded or grated work best in this recipe.
  • Seasonings as desired.

Instructions

  • Prepare your ingredients as indicated. Your potatoes should be grated, meat should be browned, and pepper should be diced. Also, your can prep your slow cooker or Crock Pot for nonstick.
  • Whisk together your eggs with your seasonings and peppers in a medium bowl.
  • To make the layers, start by layering half of the potatoes on the bottom of the pot with one half of the cooked sausage on top.
  • Cover the sausage with one half of your cheese and then repeat the layering process .
  • Give your eggs a quick whisk and then pour the mixture over the top layer of the ingredients in the slow cooker.
  • Cover your slow cooker and slow cook your casserole for three to four hours on high or six to eight hours on low.
