Ingredients

  • 4 cups Chicken. - cooked and the shredded.
  • 15 oz Cannellini Beans --drained and rinsed.
  • 15 oz Black beans. --drained and rinsed.
  • 15 oz Fire Roasted Tomatoes -diced
  • 1 cup Corn -drained
  • 1 Onion. -Chopped small.
  • 4.5 Green Chilis - Diced.
  • 3 cloves Garlic. -minced.
  • 2 cups Chicken Broth
  • ½ cup Buffalo Sauce.
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • ½ teaspoon Paprika
  • ½ teaspoon Oregano

Instructions

  • Layer. Place your cooked and shredded chicken into your slow cooker. Then add the beans, tomatoes, corn, diced onion, chili and minced garlic. Give the ingredients a quick stir.
  • Broth. In a medium bowl, use a whisk to combine together the chicken broth, buffalo sauce, and seasonings. Then pour this mixture over the ingredients in your slow cooker and mixing all of the ingredients together.
  • Slow Cook. Cover your slow cooker and cook on high for four hours or low for six to eight hours (low is preferred for optimal flavor!).
  • Serve. Serve your chili with cilantro, blue cheese, ranch or blue cheese dressing, or as desired.
