Ingredients

  • 4 Chicken Breasts. ---Boneless and skinless chicken breasts
  • 6 Potatoes. --- medium, cut into bite-sized about two inches pieces.
  • 1 cup Carrots.
  • 1 Onion. --chopped into small pieces.
  • 4 teaspoon Garlic. --minced
  • 1 cup Chicken Broth.
  • 2 tablespoon Olive Oil.
  • 1 teaspoon Thyme
  • 1 teaspoon rosemary
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  • Start by placing the potatoes and carrots into your slow cooker. Then stir in the onion and garlic .
  • Pour the chicken broth over the ingredients in the slow cooker and stir.
  • Place the chicken on top of the ingredients in the slow cooker and then drizzle the oil over the chicken. Then add the seasonings on top.
  • Cover your slow cooker and cook on low heat for 4-6 hours or until the chicken is tender and the potatoes are cooked through.
  • Once your chicken is done cooking, you can carefully remove it. If desired, you can use two forks to shred the chicken or you can simple serve the chicken breasts whole over your cooked vegetables.
