Ingredients

  • 1 lb Chicken --Boneless skinless chicken breasts.
  • 15 oz Black Beans. --Drained and rinsed
  • 1 cups Corn.
  • 10 oz Diced Tomatoes with Green Chilies.
  • 4 cup Chicken Broth.
  • 1 Onion -- Diced into pieces.
  • 3 cloves Garlic. --Minced
  • 4 teaspoon Taco Seasoning --or similar seasoning.
  • 4 oz Cream Cheese --softened
  • ½ cup Heavy Cream

Optional for serving: Tortilla strips or crushed tortilla chips for topping, shredded cheese, sour cream, and avocado.

Instructions

  • Prepare. Prepare your ingredients as indicated.
  • Chicken. Place your chicken breasts into your slow cooker.
  • Ingredients. Add the beans, corn, tomatoes, onion, garlic and seasoning to the slow cooker.
  • Broth. Pour the chicken broth over the ingredients in your slow cooker.
  • Slow Cook Cover your slow cooker and cook on low for six to eight hours or on high for three to four hours or until the chicken is tender and cooked through (no pink and 165f internal temperature).
  • Shred. Use two forks for shred the chicken. You can do this in the slow cooker or carefully remove the chicken from your cooker and transfer it to a clean cutting board and then return the shredded chicken to the slow cooker pot, stirring to combine.
  • Cream. Add the cream cheese and heavy cream to the slow cooker. Give the ingredients a quick stir and then cover and slow cook on low until the cream cheese is melted (about 15-20 minutes).
  • Serve. Stir the soup and then serve it with desired toppings such as cheese or tortilla strips.
