Crockpot Lemon Pepper Chicken

  • Make the marinade. Place your chicken in a large zip top bag or shallow baking dish. In a small bowl, use a whisk to combine together the lemon juice, lemon zest, lemon pepper seasoning, remaining seasonings and the broth. Then pour the marinade over the chicken so that the chicken is fully covered by the marinade. Marinate for a minimum of 15 minutes to overnight (refrigerated).
  • Sear the Chicken. In a large skillet over medium heat, heat your olive oil for two minutes. Cook the chicken on each side for four to six minutes or until golden brown. Transfer the chicken to your slow cooker .
  • Deglaze the pan. Pour the marinade left in the bag or baking dish into the pan and bring it to a boil. Carefully use a wooden spoon to scrape at the bottom of the pan to deglaze it. Then pour the marinade over the chicken in the slow cooker.
  • Slow Cook the Chicken. Slow cook your chicken on low for four to six hours or until done.
  • Serve. You can serve your chicken over rice, noodles, or with a tasty salad on the side.
