Prepare. Preheat your oven to 375 and prepare your defrosted turkey as indicated. This means patting the skin dry using paper towels.
Season. Rub the oil over the turkey breast and then generously season the turkey.
Layer Ingredients. Place your turkey breast into your dutch oven with the skin side up. Then top the turkey breast with the carrots and celery.
Bake. Cover the dutch oven and then place it into the center of your oven. Roast for 1.5 to two hours, or until the internal temperature reaches 165°F.
Serve. Carefully remove the turkey breast from your oven and allow it to rest for at least 10 minutes before slicing.
