Ingredients

  • 5 Chicken Breasts - 1.5 lb skinless, boneless cut into 4-5 pieces.
  • 2 tablespoon Lime Juice
  • 2 tablespoon Olive Oil
  • 2 teaspoon Garlic - minced
  • 1 teaspoon Achiote Seasoning
  • ½ teaspoon Ground Cumin
  • 1 teaspoon Oregano
  • ½ teaspoon Pepper
  • 1 teaspoon Onion Powder
  • 6 Tortillas
  • Toppings -Such as lettuce, sour cream, guacamole, shredded cheese, diced tomatoes, and/or chopped onion.

Instructions

  • Slice your chicken into four to five pieces, depending on the size, and then place them into a large zip top bag or large bowl.
  • To make the marinade, in a medium bowl, use a whisk to combine together the lime juice, olive oil, garlic, and seasonings. Then pour this over the chicken.
  • If your chicken is in a bowl, toss the chicken and marinade and then cover the bowl. For a zip top bag, seal the bag and rotate the bag until the chicken has been coated with the marinade.
    Place the chicken into your refrigerator for at least 20 minutes or preferably up to overnight. The longer the better for flavor and moisture.
  • When you are ready to air fry your chicken, preheat your air fryer to 400.
  • Place the chicken into your airfryer safe pan or basket leaving room for the air to circulate. Then air fry the chicken until done- about 15 minutes.
  • When your chicken is done air frying, transfer it to a cutting board and use two forks to shred it. You can alternatively enjoy the chicken as is without shredding it.
  • Lastly, assemble your tacos by layering the chicken with your topping ingredients and serve.
