Ingredients

  • 15 oz Black Beans. -Canned black beans rinsed and drained.
  • 14 oz Corn. -Canned whole corn
  • 3 Roma Tomatoes -- Seeds etc scooped and and then diced.
  • ½ Red Onion. --Diced
  • 1 clove Garlic. - -Minced.
  • 2 tablespoon Cilantro --Chopped.
  • ¼ cup Olive Oil
  • 2 tablespoon Lime Juice

Seasonings (optional): such as salt, pepper, ground cumin, or Southwest Seasoning .

Instructions

  • Prepare. Gather your ingredients and prepare them as indicated. This includes rinsing and draining the beans as dicing the tomatoes and onion.
  • Combine. In a large bowl, combine together your black beans, corn, diced tomatoes, dice onion, and minced garlic.
  • Toss. Add half of the olive oil (two tablespoons) and half of the lime juice (one tablespoon) and toss the ingredients. Then add the cilantro, seasonings, remaining olive oil and lime juice and toss again.
  • Serve. This recipe is best when you refrigerate the ingredients for at least 20 minutes to allow the flavors to meld together. Stir the ingredients and make adjustments as needed with your seasonings.
