Ingredients

  • 8 Tomatillos -husked rinsed, and air dried.
  • 3 cloves Garlic. -whole with the papery skin
  • 1 Jalapeño Pepper -Whole
  • ½ cup Onion -roughly chopped.
  • ½ cup Cilantro
  • 1 tablespoon Lime Juice
  • 1 teaspoon Lime Zest
  • ½ teaspoon Ground Cumin
  • ½ teaspoon Salt
  • ½ teaspoon Pepper.

Instructions

  • Prepare. Preheat your broiler on high and prep a rimmed baking sheet as desired (foil can work). Then place the tomatillos, garlic cloves, jalapeño pepper on the baking sheet, leaving space between them.
  • Broil. Broil the the ingredients until they become slightly charred and soft, carefully turning them over once during the process (about 8-12 minutes total). If some of the ingredients seem to be roasting faster than others, you can carefully remove them from the baking sheet.
  • Cool. Remove the roasted ingredients from the broiler and transfer them to a dish to cool.
  • Cooled. Once your roasted ingredients have cooled you can remove the skin from the garlic cloves and the stem, seeds, and membranes from the pepper .
  • Process. You can use a good blender or food processor for this step. Start by processing or pureeing the tomatillos until smooth.
  • Pulse. Add the remaining ingredients and pulse until you reach your desired consistency. You can make adjustments with the seasonings as desired.
  • Serve. Transfer your salsa verde to a jar or serving bowl and let it set for at least a half hour for the flavors to meld together before serving. You can serve your homemade salsa verde with tortilla chips, tacos, or with any dish that could benefit from a zesty and tangy green salsa.
