Instant Pot Cream of Mushroom Soup

Instant Pot Cream of Mushroom Soup, a delicious and easy creamy soup recipe made in a pressure cooker in about 20 minutes.

Ingredients

  • 1 lb Mushrooms - sliced
  • 1 tablespoon Olive Oil - diced
  • 1 Onion
  • 4 teaspoon Garlic - minced
  • 6 teaspoon Seasonings -thyme (3tsp), Italian seasonings (2 tsp), red pepper flakes (2 tsp), salt (½ tsp), and pepper (½ tsp) were used to make my soup.
  • 2 cups Broth - chicken or vegetable
  • 1 cup Heavy Cream
  • 2 tablespoon Cornstarch

Instructions

  • Add the olive oil to the Instant Pot and set it to sauté. Once the oil is hot add the onions and cook until soft and translucent. Then add the garlic and cook for 30 seconds.4. Add the dried thyme, Italian herbs, salt, pepper, chicken broth and mushrooms.
  • Next, add the seasonings, mushrooms, and broth to the pot. Stir to incorporate.
  • Close the lid and set the valve to sealed. Then set the pot to High Pressure for 10 minutes.
    Allow the Instant Pot to release pressure naturally before removing the lid.
  • Meanwhile, in a small bowl, combine the cornstarch and heavy cream.
  • Once the the Instant Pot has released pressure, remove the lid and use an immersion blender to blend the soup until desired consistency is achieved.
  • Turn the Instant Pot back to Sauté and whisk in the heavy cream mixture.
  • Allow the soup to simmer for a few minutes
    Serve with fresh thyme sprigs and garnish with fried mushrooms as desired.
