Instant Pot Tofu Curry,

Ingredients

Tofu

  • 1 tablespoon Canola Oil
  • 1 Onion. -Chopped fine.
  • 2 tablespoon Ginger. -Chopped fine.
  • 14 oz Tofu. -Firm or extra firm tofu that has been cut into one inch cubes.
  • Salt and Pepper to taste

Sauce

  • 13.5 oz Coconut Milk
  • 6 oz Tomato Paste
  • 2 tablespoon Red Curry Paste
  • 1 tablespoon Curry Powder

Instructions

  • Prepare. Prepare your ingredients as indicated. This includes chopping the onion and garlic and slicing the tofu into cubes.
  • Sauté. Add the oil and chopped onion and ginger to your pot. Set the post to sauté function and cook until fragrant- about 1 minutes. Then add the tofu cubes and saute for another minute.
  • Sauce. In a medium sized bowl, use a whisk or similar item to combine together your sauce ingredients (coconut milk, tomato past, and curry ingredients). Once fully combined, use a wooden spoon to stir the ingredients into the pot with the sauteed ingredients until the tofu is all coated with sauce.
  • Cook. Close the lid on pot and set the pot to high pressure for five minutes. Then release the pressure immediately.
  • Serve. Enjoy your tofu curry as desired.
