Equipment

Ingredients

  • lb Potatoes -baby cut into smaller pieces
  • 12 oz Green Beans -trimmed.
  • 1 Onion. -chunks or wedge pieces.
  • 2 Bell Peppers. --one inch chunks.
  • 2 tablespoon Olive oil
  • 2 cloves Garlic. --minced.
  • 1 teaspoon Cajun Seasoning
  • 2 lbs Andouille or cajun sausage. --cut into one inch pieces.

Instructions

  • Prep. Preheat your oven to 400 and prep a rimmed baking sheet for nonstick.
  • Ingredients. In a large bowl, combine together all of the ingredients ( potatoes, green beans, onion, peppers, oil, garlic, seasoning and sausage) .
  • Transfer. Carefully transfer the coated ingredients to your prepared baking sheet. Use the backside of a large spoon or similar item to evenly spread the ingredients out over the baking sheet.
  • Bake. Bake for 20-25 minutes or until the vegetables are tender and the sausage has browned, tossing or stirring the ingredients halfway (about 10 minutes).
  • Serve. You can serve your sausage and vegetables over rice or as desired.
