Prepare. Use a clean paper towel to blot off the chicken. This will remove liquid allowing the chicken to properly sear and for the coating to stick.
Cook. In a large skillet on medium-high heat, heat the olive oil for one minutes. Add the chicken thighs to the skillet and cook for five to seven minutes on each side, or until the chicken is browned and cooked through.
Sauce. To make the sauce, in a medium bowl, use a whisk to combine together the buffalo sauce, honey, and seasonings. You can taste and make adjustments as needed.
Finish. Pour half of the sauce over the chicken, carefully flip the chicken over, and repeat this process with the remaining sauce. Then bump the heat down to low and allow the ingredients to simmer for five to seven minutes in the sauce.
