Slow Cooker Chicken Stroganoff

Ingredients

  • 1 lb Chicken Breast --Sliced into small strips.
  • 3 cups Mushrooms. --Both brown and white mushrooms were used in my stroganoff.
  • 1 Onion. --Sliced or diced .
  • 1 cup Chicken Stock.
  • 2 tablespoon Tomato Paste.
  • 1 tablespoon Sweet Paprika.
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon Dijon Mustard
  • 1 cup Sour Cream
  • 1 tablespoon Cornstarch --Along with two tablespoons of water this is used as a slurry to thicken the sauce.

Instructions

  • Chicken. Slice your chicken into strips as indicated. Place the chicken strips into your slow cooker. Then place the sliced mushrooms and onions on top of the chicken.
  • Sauce. In a medium bowl use a whisk to combine together the chicken stock, tomato paste, paprika, worcestershire sauce, and mustard. Pour this mixture over the ingredients in your slow cooker and stir to combine.
  • Slow Cook. Cover your slow cooker and slow cook the ingredients on low for six hours, high for four hours or until the chicken is tender and cooked through (no pink and 165f internal temperature). You should stir the ingredients a few times while they slow cooks.
  • Slurry. After slow cooking for five hours on low or three hours on high, add a slurry to thicken your sauce. To make the slurry, use a fork or small whisk to combine together the cornstarch with two tablespoons of water in a small bowl. Add this to the slow cooker and stir in your sour cream. Then continue to slow cook until done.
  • Serve. You can serve your chicken stroganoff over cooked egg noodles, on top of rice, or as desired.
