Start by preparing the bottom of your slow cooker for nonstick. You can grease it or use a slow cooker liner for example.
Place the potatoes into your slow cooker. Evenly spread them out as much as possible.
In a mixing bowl, use a whisk to combine together the remaining ingredients (butter, mustard, honey, garlic, and seasonings). Pour half of the whisked ingredients over the potatoes and then toss the ingredients together. Then pour the remaining whisked ingredients over the potatoes and toss again.
Place the cover on to your slow cooker and then set the time to cook. You can cook these potatoes on high for two hours or low for four to six hours.
Your potatoes will be done when they are tender and cooked through. Since tenderness of potatoes can be a personal thing (some like their potatoes more tender than others), it is a good idea to test your potatoes with a fork.
Serve your potatoes with the garnishings of your choice.
