Instructions
Place the chicken into your slow cooker or crock pot.
In a mixing bowl or large measuring cup with a spout, use a whisk to combine together the coconut milk, peanut butter, soy sauce, honey, garlic, ginger, and lime juice. Then whisk in your curry powder and any seasonings.
Pour about half of the whisked ingredients over the chicken. Stir or flip the chicken and add the remaining ingredients, taking care to coat all of the chicken pieces.
Cover the slow cooker and cook the chicken, stirring occasionally, on high for four hours or on low for six to eight hours or until the chicken is cooked through and tender.
At around 30 minutes prior to serving your chicken, carefully stir in the green beans and red bell pepper pieces.
Continue to slow cook the chicken as needed until it is cooked through.
