Base. Place your diced chicken into your slow cooker along with the onion pieces, pepper pieces, and (drained) pineapple chunks.
Sauce. In a medium bowl, use a whisk to combine together a quarter cup of the drained pineapple juice, ketchup, vinegar, soy sauce, brown sugar, and garlic. Once combined, pour half of this over the ingredients in your slow cooker, stir the ingredients, and then repeat with the remaining sauce.
Slow Cook. Cover your slow cooker and cook your chicken on low for five hours or three hours on high.
Slurry. In a small bowl, use a clean whisk to combine together the cornstarch with two tablespoons of cold water. Stir this into the ingredients in the slow cooker and continue to cook with the lid off until thickened.
Serve. Serve your chicken with sesame seeds and chopped green onions on rice or as desired.
