Prepare. Prep your slow cooker with nonstick spray or use a slow cooker liner. Also, gather and have your ingredients prepared as indicated.
Layer. Place the chicken pieces into your slow cooker. Top the chicken with the Chickpeas, Diced Tomatoes with liquid, Quartered Artichoke Hearts, Onion Slices, Bell Pepper Pieces, Minced Garlic, Seasonings, and broth.
Slow Cook. Cover the slow cooker and slow cook on low for six hours, stirring occasionally.
Couscous After six hours of slow cooking, you can stir in the couscous and continue to slow cook until the liquid is absorbed into the couscous.
Serve. Stir in the spinach and serve with the crumbled feta cheese on top.
