Ingredients

  • 4 Chicken Breasts. -Boneless skinless breasts that have been cut into bite-sized pieces.
  • 15 oz Chickpeas -Rinsed and drained.
  • 14.5 oz Diced Tomatoes. -With the liquid from the can.
  • 13.75 oz Quartered Artichoke Hearts -Drained.
  • ½ cup Onion. -Sliced thin.
  • 1 Bell Pepper -Seeds and stem removed and cut into one inch pieces.
  • ½ cup Kalamata Olives - Sliced in half.
  • 1 tablespoon Garlic. -Freshly minced.
  • ½ teaspoon Salt
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Ground Coriander
  • ½ teaspoon Ground Ginger
  • ½ teaspoon Ground Cumin
  • ½ teaspoon Black Pepper
  • ¼ teaspoon Cayenne Pepper
  • 3 cups Chicken Broth
  • 2 cups Pearl Couscous
  • 2 cups Baby Spinach -- chopped small
  • tablespoon Feta Cheese --crumbles

Instructions

  • Prepare. Prep your slow cooker with nonstick spray or use a slow cooker liner. Also, gather and have your ingredients prepared as indicated.
  • Layer. Place the chicken pieces into your slow cooker. Top the chicken with the Chickpeas, Diced Tomatoes with liquid, Quartered Artichoke Hearts, Onion Slices, Bell Pepper Pieces, Minced Garlic, Seasonings, and broth.
  • Slow Cook. Cover the slow cooker and slow cook on low for six hours, stirring occasionally.
  • Couscous After six hours of slow cooking, you can stir in the couscous and continue to slow cook until the liquid is absorbed into the couscous.
  • Serve. Stir in the spinach and serve with the crumbled feta cheese on top.
