Prep chicken. Cut your chicken into bite sized pieces and place the pieces into a medium bowl. Add the cornstarch to the bowl and toss the chicken pieces until they all have cornstarch on them. Place the chicken into your slow cooker.
Sauce. In a clean bowl, use a whisk to combine together the soy sauce, water, brown sugar, garlic, ginger, honey, and oil. Then pour half of this over the chicken, toss the chicken, and add the remaining sauce on top.
Slow Cook. Cover your slow cooker, set the temperature on low, and cook for six to seven (or high for four to five hours. Check the Chicken. Check on the chicken periodically while it is slow cooking. You can stir the ingredients as needed.
Serve. Serve your chicken with sesame seeds and chopped green onions on rice or as desired.
