Equipment

Ingredients

  • cups Black Beans. --cooked and drained.
  • 2 Jalapenos --Sliced in half seeds removed.
  • 3 cloves Garlic. --Peeled and lightly crushed.
  • ½ Onion. --diced.
  • 2 Tomatoes. --Washed and diced
  • ½ cup Cilantro -- Loosely pack cilantro leaves washed, dried and chopped
  • 1 tablespoon Lime Juice
  • 2 tablespoon Canola Oil
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • ½ teaspoon Dried Oregano
  • 1 teaspoon Sea Salt.

Optional Ingredients. Canned Corn, Lemon Juice, chopped or diced avocado, or additional seasoning

Instructions

  • Prepare. Prepare your ingredients as indicated. This includes slicing your jalapenos, dicing your tomatoes, and crushing your garlic cloves.
  • Sear. In a heavy skillet, such as a cast iron skillet, on medium heat, heat your oil for one minute. Then add the jalapeno halves and the garlic cloves and sear for a minute and a half on both sides or until brown and softened. Remove the ingredients from the pan and allow them to cool for a minute or so before chopping them into small pieces and returning them to the skillet.
  • Heat. Add the beans and seasonings to the skillet with the jalapeno and garlic pieces and cook the ingredients for five minutes, stirring regularly.
  • Tomato and Onion. Stir in the diced onion and tomato and cook the ingredients for another minute.
  • Finish. Remove the ingredients in the skillet from the heat and carefully stir in the chopped cilantro, and lime juice.
  • Serve. This salsa can be served warm or cold.
