Prepare. Preheat oven to 375°F and prep your baking dish for nonstick. My baking dish was lightly greased.
Cook. If your turkey has not been cooked, in a large skillet over medium heat, cook the ground turkey and diced onion until the turkey is browned and cooked through (about seven to eight minutes) . Then add the garlic and cook for another minute. If your turkey has already been cooked, simply just cook the onion until translucent (about three to four minutes) and then add the garlic and cook for another minute.
Combine If your turkey has already been cooked, add it to the skillet along with the black beans, diced tomatoes, enchilada sauce, chili powder, cumin, salt, and pepper. Simmer the ingredients for five minutes. Note that if you have just cooked your turkey, leave it in the skillet for this step.
Layer. Place a layer of tortilla pieces on the bottom of your prepared baking dish (half of your tortilla pieces). Top the tortillas with half of the mixture from the skillet and sprinkle half of the cheese over the mixture. Repeat this step with the remaining ingredients.
Bake Cover the casserole dish with aluminum foil and bake the casserole for 20 minutes. Then uncover the casserole and bake another 10 minutes until the cheese is bubbly.
Set. Allow the casserole to sit at room temperature to set for 10 minutes before serving.
