Also known as Pollo Asado, Chicken Asado is a popular Latin American recipe for chicken marinated in an achiote sauce and then grilled.
Even though this chicken is great when grilled, I like how easy it is to cook the chicken in an air fryer!.

Ingredients needed to make pollo asado in an air fryer.
- Chicken Breast. Use boneless skinless breasts that have been sliced into three to four pieces. This will help the chicken fit better in your basket.
- Lime Juice. Freshly squeezed is preferred.
- Olive Oil. Feel free to use another flavorful oil such as grapeseed or avocado oil.
- Garlic. Your garlic should be minced.
- Seasonings. Achiote Powder (annatto), oregano, ground cumin, pepper, and onion powder.
- Tortillas. Corn tortillas were used in making my tacos however, a softer flour tortilla can also be used.
- Toppings. Such as lettuce, sour cream, guacamole, shredded cheese, diced tomatoes, and/or chopped onion.

Tips for Making the Best Chicken Asado.
Skinless and boneless chicken chicken breasts were used in making my chicken asado. Thigh meat can also work in this recipe.
More helpful tips for you.
- Lime juice was used in making my chicken. Really, about any citrus juice or mix of citrus juices should work as long as they are freshly squeezed.
- Smoked paprika is a suitable substitute for the achiote powder. You may need to made adjustments as needed in how much you use.
- Marinating the chicken is really the secret to making a great tasting chicken asado. If you are able to marinate for at least an hour or even better, overnight, your chicken will be really flavorful.
- Your chicken is technically done cooking when it reaches 165 degrees. If you are making thicker pieces of chicken, it may be a good idea to check on it.
- Like with other air fryer recipes, is a good idea to leave room in the air fryer basket for the warm air to circulate. If you need to make the chicken in your basket ('cramming' it in..) you may want to air fry the chicken in batches.
- Depending on your air fryer and how your chicken is cut, cooking times can vary. Keep an eye on your chicken as needed.
How to make Easy Air Fryer Chicken Asado Tacos
Prep Time : 10 minutes .
Air Fry Time : 15 minutes. .
Servings: 6 to 8 tacos, depending on the size of your tortillas and the amount of other ingredients added to the tacos. .
- Slice your chicken into four to five pieces, depending on the size, and then place them into a large zip top bag or large bowl.
- To make the marinade, in a medium bowl, use a whisk to combine together the lime juice, olive oil, garlic, and seasonings. Then pour this over the chicken.
- If your chicken is in a bowl, toss the chicken and marinade and then cover the bowl. For a zip top bag, seal the bag and rotate the bag until the chicken has been coated with the marinade.
- Place the chicken into your refrigerator for at least 20 minutes or preferably up to overnight. The longer the better for flavor and moisture.
- When you are ready to air fry your chicken, preheat your air fryer to 400. My chicken was cooked in an air fryer safe pan to help keep the juices in and for an easier clean up.
- Place the chicken into your airfryer pan or basket leaving room for the air to circulate. Then air fry the chicken until done- about 15 minutes. I would check on the chicken after 10 minutes however.
- When your chicken is done air frying, transfer it to a cutting board and use two forks to shred it. You can alternatively enjoy the chicken as is without shredding it.
- Lastly, assemble your tacos by layering the chicken with your topping ingredients and serve.

How to store leftover chicken asado.
Once the chicken has fully cooled, it can be stored in an airtight container or zip top bag. When properly stored and refrigerated, leftovers should keep for up to a few days.
