- Eggs. You will need to scramble eggs on the stove before adding them to this recipe.
- Tortillas. My Quesadillas were made with nine inch flour tortillas. You can use the tortillas of your choice including low carb tortillas.
- Cheese. Use grated or shredded cheese. I like cheddar or a blend such as Mexican blend or a colby jack blend.
- Add-in protein. Cooked bacon was used in my Quesadillas. You can use the cooked meat or poultry or alternative protein of your choice.
- Add-in seasonings. I put bacon salt on about everything (popcon!). Everything seasoning or a Mexican seasoning also goes well.
- Add-in veggies. This can include slice pepper, chopped onions, or even diced tomatoes.

- When cooking your scrambled eggs, cook them until almost done. They should finish cooking in the air fryer and you may not want overdone eggs.
- When filling the Quesadillas, try not to overfill them as the cheese will melt and push ingredients out of the tortilla.
- I like to take the basket out of my air fryer, lightly spray it with olive oil, and then place it back into the air fryer to prepare it for nonstick.
- This recipe can be made in a toaster oven, convection oven, regular oven, or in a skillet. Cooking time can vary however so it is best to keep an eye on your Quesadillas while they are cooking.
- When placing Quesadillas in your air fryer, leave room between the Quesadillas for the air to circulate inside of your air fryer. Depending on the size of your air fryer, you may need to make this recipe in batches.
- Flipping the Quesadillas over halfway through cooking will help them cook more evenly.
How to make Air Fryer Bacon and Eggs Quesadillas
Prep Time: 5 minutes .
Air Fry Time: 12-14 minutes. .
Yield: Two full Bacon and Eggs Quesadillas .
- Start by making scrambled eggs as you normally would. I like to whip my eggs using a whisk and then cooking them in a prepped skillet on medium heat. Fluffy eggs work great in this recipe.
- Preheat your air fryer to 400 and prep the basket for nonstick as desired. While the air fryer is heating you can assemble the Quesadillas.
- On a clean work surface or cutting board, lay out one tortilla .
- Evenly spread out half of the cheese over the tortilla avoiding the outer ½" rim.
- Layer the eggs, bacon, add-ins, and remaining cheese over the bottom cheese layer.
- Place the remaining tortilla over the ingredients.
- Give the top of the Quesadilla a quick spray of oil and then air fry it for four minutes.
- Flip the Quesadilla over and give it another quick spray. Cook for another four minutes or until done.
- Carefully remove the Quesadilla from the air fryer and slice it into servings.
Expert Tip 👉 I like to give my Quesadilla a bit of seasoning after spraying them with the oil. The oil helps the Quesadilla get crisp while the seasonings helps to make them taste even better.

These Bacon and Eggs Quesadillas really taste best when served warm. However, once the Bacon and Eggs Quesadillas have fully cooled they can be stored in an airtight container or wrapped in foil. They should keep four up to a couple of days when refrigerated or up to a couple of months when frozen.
