    • Brown Sugar. For extra sweetness.
    • Chopped Nuts. I like walnuts or pecans for this recipe.
    • Pumpkin Pie Spice. For that authentic fall taste.

    Basic pumpkin puree is used in this recipe. Pumpkin puree differs from pumpkin pie filling as it has already been cooked and there are no other ingredients added to it.

    More helpful tips for you.

    1. For creamier oatmeal you can sub in half and half for part of your milk.
    2. My oatmeal was made in a six quart Crockpot. If you are using a smaller slow cooker, you may need to cut the ingredient quantities as needed.
    3. Not a fan of pumpkin pie spice? No problem. I have recipes for homemade spice blends here.
    4. Not a fan of maple syrup? No problem. You can use the liquid sweetener of your choice as long as it can be used in baking. Keep in mind that maple syrup does not measure 1:1 with most other sweeteners so you may need to make adjustments in the amount that you use.
    5. Using a slow cooker liner can make for an easier clean up. You can find slow cooker liners here.
    6. This recipe can be prepared the night before. It is a good idea to stir it however before serving.

    How to make Crockpot Baked Pumpkin Oatmeal

    Prep Time: 10 Minutes .
    Slow Cook Time: 8 Hours on low .
    Servings: 6, depending on how it is served .

    1. Prepare. Prep your slow cooker for nonstick as desired. I like to spray mine with nonstick spray or coconut oil.
    2. Add Ingredients. Place the ingredients to the slow cooker (oats, milk, pumpkin, maple syrup, brown sugar, nuts, pumpkin pie spice and vanilla). Then stir the ingredients to combine.
    3. Slow Cook. Cover your slow cooker and and cook on high for two to four hours or low for six to eight hours, or until the oats are cooked through. Also, stir your oatmeal occasionally.
    4. Serve. It is best to serve the oatmeal while warm. You can top it with additional syrup, chopped nuts, or milk.

    Expert Tip 👉 You can add additional milk to your slow cooker if your oats are too thick for your liking. Also, after slow cooking you can taste and adjust the sweetness of your oats as desired.

    How to store Pumpkin Oatmeal.

    Once the oatmeal has fully cooled it can be stored in the crockpot with the lid or in an airtight container. When properly stored, pumpkin oatmeal should keep for about three days when refrigerated or up to a few months when frozen. Add a bit of liquid (milk or water) to the top of the oatmeal before storing to keep it moist and warm it up slowly when you are ready to serve it.
