    This recipe is perfect for using up your leftover chicken. You can also use a store bought rotisserie chicken to make this recipe.

    1. This recipe tends to have a bit of heat and spice to it. Feel free to adjust the buffalo sauce, diced tomatoes, and seasonings as desired to your tastes.
    2. You can make this recipe vegan by omitting the chicken or using a vegan chicken alternative.
    3. Chicken broth was used for flavor and moisture in my chili. Using a beef broth or vegetable broth can introduce other flavors that can work in this recipe as well.
    4. Use canned beans in this recipe for easy and because they are already prepared. Make sure that you beans are drained and rinsed however before adding them to the slow cooker.

    Slow Cook Time: 4 hours on High or 6-8 hours on Low .
    Servings: 8 .

    1. Layer. Place your cooked and shredded chicken into your slow cooker. Then add the beans, tomatoes, corn, diced onion, chili and minced garlic. Give the ingredients a quick stir.
    2. Broth. In a medium bowl, use a whisk to combine together the chicken broth, buffalo sauce, and seasonings. Then pour this mixture over the ingredients in your slow cooker and mixing all of the ingredients together.
    3. Slow Cook. Cover your slow cooker and cook on high for four hours or low for six to eight hours (low is preferred for optimal flavor!).
    4. Serve. Serve your chili with cilantro, blue cheese, ranch or blue cheese dressing, or as desired.

    Expert Tip 👉 My chicken chili was made in a large slow cooker. You mad need to adjust your ingredients quantitates as needed for a smaller slow cooker.

    Once your chili has fully cooled, it can be stored in an airtight container. When properly stored, chicken chili can keep for up to five days when refrigerated or up to three months when frozen.

    • 4 cups Chicken. - cooked and the shredded.
    • 15 oz Cannellini Beans --drained and rinsed.
    • 15 oz Black beans. --drained and rinsed.
