Use a baking mix that is fresh. A baking mix that is past its date will not bake correctly as the leaveners will be weakened.
More helpful tips for you.
- Using a rimmed baking sheet is essential in this recipe. A baking sheet that is not rimmed will not be able to hold on to the batter.
- When combining your ingredients, mix them until just combined. A few small lumps are fine as they should bake out.
- Prep you baking sheet well for nonstick for better removal and easier clean up. Parchment paper can also be used.
- If you are adding fruit make sure that your fruit is clean and dry as the added moisture can affect your pancakes.
- Can't decide which add-in to use? Simple portion off the baking sheet using a different add-in in each section.
- How should you serve these pancakes? Just like you would serve regular pancakes. Syrup, butter, and whipped cream go well on top of these pancakes.
