- Jiffy Cornbread Muffin Mix. The basic 8.5 ounce box. Your baked cornbread will need to then be crumbled before adding it to this recipe.
- Onion. Yellow onion works great in this recipe. Your onion should be diced.
- Celery. Also diced.
- Butter. Used for sauteing. Olive oil can alternatively be used.
- Broth. Chicken or vegetable broth.
- Seasonings. Ground Sage, Ground Thyme, and Black Pepper were used in my stuffing.
- Eggs. The eggs should be beaten.

Tips for making the best cornbread stuffing.
The standard cornbread mix used in this recipe is the Jiffy brand. You could use another brand as long as the mix can bake two 8" pans worth of cornbread.

- The cornbread muffin mix is used to bake cornbread that is the base of this recipe. You can use already baked cornbread to skip this step if needed.
- This recipe works great if you bake the cornbread ahead of time to allow it to dry out so that it can keep a bit of structure when combined with the other ingredients.
- Another option is to bake the cornbread, crumble it up, and then dry it out in your oven, as it cools from baking ,on a baking sheet for a few minutes.
- Take this dish up a notch by adding cooked and crumbled sausage (like breakfast sausage) or stirring in some dried fruit (raisins or cranberries?).
- When combining your ingredients together, gently fold the ingredients until just combined to avoid making a (gluten) tough stuffing. .
- Your stuffing is done baking when a toothpick inserted in the center comes out mostly clean.

You can do this a day or two before making this recipe and then crumble the cornbread while making this recipe. If you are baking your cornbread while making this recipe, refer to the tips section above.
- Prep. Preheat your oven to 350 and prep a 9x13 baking dish well for nonstick.
- Sauté In a large skillet on medium heat, melt your butter. Then add the diced onion and celery and cook until they are softened, stirring as needed (six to seven minutes depending on the size).
- Combine. In a large mixing bowl, combine together the crumble cornbread, sautéed vegetables and seasonings. Then stir in the beaten eggs and the broth and mix until just combined.
- Bake. Evenly spread the mixture from the bowl into your prepared baking dish, Bake for 25-30 minutes or until the top is golden brown and slightly crispy.
- Serve. Let your stuffing rest for a few minutes before serving to allow the flavors to meld together.
Expert Tip 👉 You can make the stuffing up to a couple of days ahead of time and then cover and refrigerate it until you are ready to bake it.
How to store Cornbread Stuffing.
Once your cornbread has fully cooled, it can be stored in an airtight container. When properly stored, it can keep for up to a couple of days when refrigerated or up to a couple of months when frozen.
