Tips for making the best slow cooked chicken stroganoff.
Skinless, boneless chicken breast was used to make my stroganoff. For more flavor, you can use skinless, boneless chicken thighs with or instead of the chicken breast.

- When slicing your chicken, makes sure that the pieces are sliced into bite sized strips that are similar in size for more uniform cooking.
- Two kinds of mushrooms were used in my stroganoff to make it more interesting. You can use use the mushrooms of your choice.
- Make sure that your chicken is fully cooked before serving. Your chicken should have no red or pink areas and should have an internal temperature of 165.
- Full fat sour cream helps to give the stroganoff a creamier texture with a bit of tang. Plain Greek yogurt can alternatively be used.
- You can take this dish up a notch by adding sliced peppers, minced garlic, or even a can of peas.
- Make this recipe even easier by using a precooked chicken. Your slow cook time will shorten so it is best to keep and eye on it as it slow cooks.
How to make Slow Cooker Chicken Stroganoff
Prep Time: 10 minutes .
Slow Cook Time: 4 hours on high or 6 hours on low .
Servings: 6 .
- Chicken. Slice your chicken into strips as indicated. Place the chicken strips into your slow cooker. Then place the sliced mushroom and onions on top of the chicken.
- Sauce. In a medium bowl use a whisk to combine together the chicken stock, tomato paste, paprika, worcestershire sauce, and mustard. Pour this mixture over the ingredients in your slow cooker and stir to combine.
- Slow Cook. Cover your slow cooker and slow cook the ingredients on low for six hours, high for four hours or until the chicken is tender and cooked through (no pink and 165f internal temperature). You should stir the ingredients a few times while they slow cooks.
- Slurry. After slow cooking for five hours on low or three hours on high, add a slurry to thicken your sauce. To make the slurry, use a fork or small whisk to combine together the cornstarch with two tablespoons of water in a small bowl. Add this to the slow cooker and also stir in your sour cream. Then continue to slow cook until done.
- Serve. You can serve your chicken stroganoff over cooked egg noodles, on top of rice, or as desired.
Expert Tip👉 The cornstarch slurry is used to thicken the sauce towards the end of slow cooking. If your stroganoff does not need a lot of thickening you can simply remove the lid, stir in your sour cream, and allow the ingredients to slow cook until you reach your desired texture for serving. For sauce that is too thick, you can stir in additional broth or keep the lid on the slow cooker.
How to store stroganoff made with chicken.
Once your chicken has fully cooled, it can be stored in an airtight container. When properly stored, it should keep for up to a couple of days in the refrigerator or up to a few months when frozen.
