    • Coconut Milk . Using a full fat coconut milk will make your sauce even more creamy.
    • Peanut Butter Creamy or crunchy peanut butter can be used.
    • Soy Sauce. A low sodium soy sauce can be used.
    • Honey. Added for a nice sweet balance to the other ingredients.
    • Garlic. Your garlic should be minced.
    • Ginger. Freshly grated works best for flavor.
    • Lime Juice. Use freshly squeezed lime juice if possible.
    • Curry Powder. Added to give this recipe a bit of heat. Feel free to adjust the amount that you add to your preferences.
    • Green Beans. Cut into bite sized pieces.
    • Red Bell Pepper. Stem and seeds removed and then sliced small.
    • Optional ingredients: seasonings such as salt and pepper, chopped peanuts, or red curry paste.

    Tips for making the best slow cooker chicken satay.

    My satay chicken was made with boneless chicken thighs. You can however use chicken breast however, keep in mind that cooking times may be vary and the white meat may not be as moist as dark meat.

    More helpful tips for you.

    1. Curry powder is used to make this recipe a bit hot or spicy. You can omit this or increase it depending on your needs.
    2. Green beans are added for a vegetable element. You can omit the green beans or use another vegetable such as corn.
    3. Not a fan of peanut butter? No problem, you can use another kind of nut butter.
    4. Make this recipe even faster to make by pre-cooking your chicken or using pre-cooked chicken.
    5. The green beans and red bell pepper are added to the slow cooker about a half hour before the recipe is done cooking to keep them from getting soggy. You can alternatively cook the green beans separately and serve them with the chicken instead.
    6. To thicken your sauce simply stir in a teaspoon or so of cornstarch. To thin it out, add a bit more coconut milk or water.

    How to make Slow Cooker Crock Pot Satay Chicken

    Prep Time: 15 minutes.
    Slow Cook Time: 4 hours on high or 6-8 hours on low.
    Servings: 6 depending on serving sizes.

    1. Prepare your chicken, green beans, and red bell pepper as indicated.
    2. Place the chicken into your slow cooker or crock pot.
    3. In a mixing bowl or large measuring cup with a spout, use a whisk to combine together the coconut milk, peanut butter, soy sauce, honey, garlic, ginger, and lime juice. Then whisk in your curry powder and any seasonings.
    4. Pour about half of the whisked ingredients over the chicken. Stir or flip the chicken and add the remaining ingredients, taking care to coat all of the chicken pieces.
    5. Cover the slow cooker and cook the chicken, stirring occasionally, on high for four hours or on low for six to eight hours or until the chicken is cooked through and tender.
    6. At around 30 minutes prior to serving your chicken, carefully stir in the green beans and red bell pepper pieces.
    7. Continue to slow cook the chicken as needed until it is cooked through.
    8. Serve the Slow Cooker Satay Chicken over cooked rice or noodles. You can garnish it with chopped peanuts and fresh cilantro for added flavor and presentation before serving.

      Is there a way to make the chicken on skewers?

        I have not tried making this with skewers in a slow cooker. You can try cutting the chicken into large chunks, cook it, and then put it on skewers.
