- Chicken. Boneless skinless chicken breasts were used to make my salsa chicken. Boneless thigh meat can alternatively be used.
- Taco Seasoning. You can use the taco seasoning mix of your choice.
- Salsa. The store bought salsa in a jar works just find. Mild, spicey, chunky, or regular salsa of your choice.
- Lime Juice. This adds a nice flavor balance to this recipe. Fresh lime juice is preferred.
- Optional Add-Ins - diced tomatoes (the canned stuff), corn, beans, chopped onion, cilantro, or even peppers.

Tips for making the best chicken salsa in a slow cooker.
The chicken is cooked until it is tender enough to shred with two forks.
If you are not a fan of shredded chicken, you can just break the chicken into chunks or use chicken that has been cut into pieces before placing it into your slow cooker.
More helpful tips for you.
- You can prep your slow cooker with nonstick or use a slow cooker liner for this recipe.
- Cover the chicken while it slow cooks to keep the moisture in. It is recommended that you check on the chicken and stir it occasionally however.
- If your sauce seems to be getting thinner than you would like, simple add salsa or broth to the slow cooker.
- For a thicker sauce you can stir in some tomato paste
- Shredding chicken is as easy as pulling it apart using two forks. If you are having trouble doing this your chicken may not be done cooking.
- Not sure if your chicken is done cooking? The salsa can keep the chicken red or pinkish even when it is done cooking. Chicken is done cooking when it reaches an internal temperature of 165°F (74°C).

- Prepare your chicken by first using a clean paper towel to pat it dry. Then place the chicken into your slow cooker.
- Sprinkle half of the taco seasoning on top of the chicken and then flip the chicken over and sprinkle the remaining seasoning over the unseasoned side.
- Pour the salsa over the chicken and use a spoon to coat the chicken evenly with it. Then drizzle the lime juice over that.
- Cover the slow cooker with the lid.
- Cook your salsa chicken for four hours on high or eight hours on low or until it is shreddable.
- Use two forks to shred the chicken.
- Mix the ingredients so that the shredded chicken is even mixed into the sauce.
Expert Tip 👉 If your slow cooker is too small to allow you to shred your cooked chicken, simple take the chicken out of the cooker to shred it. Then return the shredded chicken to the slow cooker to blend in with the sauce.
How to store Crockpot slow cooker chicken.
Once this chicken has fully cooled, it should be stored in an airtight container.
When properly stored, this chicken should keep for a couple of days refrigerated or frozen for up to a few months.
