Ingredients

  • 2 Eggplants. --Washed and dried.
  • 1 tablespoon Tahini.
  • 6 tablespoon Greek Yogurt. --Use plain Greek yogurt.
  • 1 teaspoon Garlic Puree.
  • 3 tablespoon Olive Oil.
  • 1 teaspoon Granulated Garlic
  • ½ teaspoon Paprika
  • ½ teaspoon Salt
  • Mint for garnish

Instructions

  • Eggplant. Prepare your washed and dried eggplants by using a fork to poke holes all over it. Then brush olive oil over the skin and add salt as desired.
  • Air Fry. Place the eggplants into your air fryer and air fryer at 375°F for 15 minutes. Carefully flip the eggplants over and continue to air fryer for another 15 minutes until browned. Allow the eggplants to cool while you continue.
  • Base. To make the base for this dip, in a medium bowl, combine together the remaining ingredients (Greek yogurt, etc). Cover the bowl and refrigerate the mixture while you work.
  • Eggplants . Once your eggplants have cooled enough to handle, peel the skin off and then chop the eggplants into smaller pieces. You can use a food processor or good blender to smooth this out if desired.
  • Combine. Combine together the eggplant with the refrigerated ingredients until you reach your desired texture. Taste and add additional seasonings as well if desired.
  • Serve. Cover and refrigerate the dip for 20 minutes for the flavors to meld. Then serve your eggplant dip with pita chips or as desired.
