Ingredients

  • ¼ cup Onion --finely chopped.
  • 1 clove Garlic. --minced.
  • 2 tablespoon Butter
  • 2 tablespoon Flour
  • cups Chicken Stock
  • 2 tablespoon Pan Drippings. - or amount as desired.
  • ¼ cup Heavy Cream.

Seasonings as desired. This can include salt (Kosher salt works great!), pepper, or the seasonings of your choice.

Instructions

  • Drippings. Once you have removed the turkey from the pan or skillet, you can pour the drippings into a cup, such as a measuring cup, and allow the fat to rise. You can remove the fat or some of the fat before making your gravy.
  • Aromatics. In a skillet on medium heat, place your turkey drippings. Then add the onion and cook until tender (about two hand half minutes). Once the onion is tender you can add the garlic and cook for another minutes.
  • Roux. To make your roux, melt your butter with the ingredients are in the skillet. Then sprinkle the flour over the ingredients and whisk, cooking for one minute.
  • Stock. Slowly add the chicken stock to the skillet and whisk the ingredients constantly, until the ingredients are fully combined and the gravy is lump-free.
  • Simmer. Allow your gravy to simmer until slightly thickened (two to three minutes).
  • Finish Making the Gravy. Whisk in your remaining ingredients and reduce the heat to low to keep your gravy warm.
