- Drippings. Once you have removed the turkey from the pan or skillet, you can pour the drippings into a cup, such as a measuring cup, and allow the fat to rise. Then you can use a spoon to remove the fat or some of the fat before making your gravy.
- Aromatics. Transfer your drippings to a skillet on medium heat. Then add the onion and cook until tender (about two and a half minutes). Once the onion is tender you can add the garlic and cook for another minute.
- Roux. To make your roux, melt your butter with the ingredients that are in the skillet. Then sprinkle the flour over the ingredients and whisk, cooking for one minute.
- Stock. Slowly add the chicken stock to the skillet and whisk the ingredients constantly, until the ingredients are fully combined and the gravy is lump-free.
- Simmer. Allow your gravy to simmer until slightly thickened (two to three minutes).
- Finish Making the Gravy. Whisk in your remaining ingredients and reduce the heat to low to keep your gravy warm.
Expert Tip 👉 This gravy will thicken when it is removed from the heat. It is best to keep it warm before serving it rather than letting it sit at room temperature. A small slow cooker (what I use) set on 'keep warm' can help.
How to store homemade turkey gravy.
Once your gravy has fully cooled, it should be stored in an airtight container or zip top bag separate from the turkey. When properly stored, gravy should keep for about three days when refrigerated or up to six months when frozen.
