Lightly brush your grill grates with olive oil. Then preheat it to high heat (425-450).
Meanwhile, in medium bowl, combine together your tomatoes, chopped basil, minced garlic, and olive oil . You can add salt and pepper to taste.
Then in another bowl, to make the marinade, use a whisk to combine together the Italian seasoning, garlic powder, salt and pepper, and remaining olive oil. Then use a pastry brush to brush this over both sides of the chicken. You can discard any remaining marinade.
Grill the chicken for five minutes and then flip it over and continue to grill until done (165 internal temperature).
Let the chicken sit for a few minutes before serving.
To serve, simple top each fully cooked chicken breast with the bruschetta topping (you can use a tablespoon to do this). Then drizzle the balsamic glaze and any optional cheese on top.
