- Tomatoes. I like cherry or Roma tomatoes for this recipe for size and flavor. Your tomatoes should be diced or sliced in half (depending on the size).
- Basil. To make this more authentic, use fresh basil leaves. Your basil should be chopped into smaller pieces.
- Olive Oil Use a good and flavorful olive oil.
- Garlic. Your garlic should be minced or diced small.
- Salt and Pepper to taste. Use a larger salt, such as Kosher salt, for better flavor.
For the Chicken.
- Chicken Breasts Use boneless and skinless chicken breasts .
- Olive Oil. Used for both the chicken and the topping.
- Italian Seasoning. You can use the Italian seasoning blend of your choice.
- Garlic Powder. A small amount for flavor.
- Salt and Pepper to taste.
- Balsamic Glaze. Homemade or store-bought. This is drizzled over the topped just before serving.

Marinating the chicken before grilling it can give it both flavor and moisture. Simply place the chicken in a zip top bag and top it with the other chicken ingredients listed. You can refrigerate this for as little as an hour to overnight (no longer than 12 hours).

- Meanwhile, in medium bowl, combine together your tomatoes, chopped basil, minced garlic, and olive oil . You can add salt and pepper to taste. This is for the Bruschetta topping.
- Then in another bowl, to make the marinade, use a whisk to combine together the Italian seasoning, garlic powder, salt and pepper, and remaining olive oil. Then use a pastry brush to brush this over both sides of the chicken. You can discard any remaining marinade.
- Grill the chicken for five minutes and then flip it over and continue to grill until done (165 internal temperature).
- Let the chicken sit for a few minutes before serving. To serve, simple top each fully cooked chicken breast with the bruschetta topping (you can use a tablespoon to do this). Then drizzle the balsamic glaze and any optional cheese on top.
