What makes eggplant dip so good?
Eggplant dip, aka Baba Ganoush, is an easy to make appetizer dip using healthier ingredient, and is perfectly smokey, creamy, and full of savory goodness.

What you need to make Baba Ganoush
- Eggplants. Washed and dried.
- Tahini.
- Greek Yogurt. Use plain Greek yogurt.
- Garlic Puree.
- Olive Oil.
- Seasonings. Granulated Garlic, Paprika, Salt, and Mint for garnish.
How to make Baba Ganoush Dip.
Prep Time: 5 minutes .
Bake Time: About 30 minutes .
Servings: 6 .
How to Serve: With pita chips or the chips of your choice.
Notes: Depending on this size of your air fryer, you may need to air fry the eggplants separately.
- Eggplant. Prepare your washed and dried eggplants by using a fork to poke holes all over it. Then brush olive oil over the skin and add salt as desired.
- Air Fry. Place the eggplants into your air fryer and air fryer at 375°F for 15 minutes. Carefully flip the eggplants over and continue to air fryer for another 15 minutes until browned. Allow the eggplants to cool while you continue.
- Base. To make the base for this dip, in a medium bowl, combine together the remaining ingredients (Greek yogurt, etc). Cover the bowl and refrigerate the mixture while you work.
- Eggplants . Once your eggplants have cooled enough to handle, peel the skin off and then chop the eggplants into smaller pieces. You can use a food processor or good blender to smooth this out if desired.
- Combine. Combine together the base with the refrigerated ingredients until you reach your desired texture. Taste and add additional seasonings as well if desired.
- Serve. Cover and refrigerate the dip for 20 minutes for the flavors to meld. Then serve your eggplant dip with pita chips or as desired.

Tips for making the best Eggplant Dip
Cooking the eggplant is the secret to making a really good baba ganoush. For smokier eggplant, you can try roasting in under a broiler for a minute or two after air frying.
More helpful tips for you.
- When air frying the eggplants, make sure that there is enough space between the eggplants for the warm air to circulate. This will help the eggplants air fry evenly and at the same time.
- When you remove the skin from othe eggplants your eggplant may seem to be excessively watery. This is not uncommon. I like to wrap mine in clean paper towels to absorb the excess water. Another option is to let the eggplant chunks sit in a colander for 15-20 minutes to drain.
- This dip tastes even better when the flavors are allowed to meld together. You will find that that refrigerating the dip overnight brings out even more flavor.
How to store Baba Ganoush
Baba Ganoush (eggplant dip) should be stored in an airtight container. When properly stored, it should keep for up to five days refrigerated and up to a few months when frozen. You can drizzle a bit of olive oil over it before storing to keep it moist. Don't forget to stir your dip before serving! .
