Using already cooked shrimp makes this recipe even easier as you can easily find this in the freezer department at your local grocery store. Large or jumbo sized shrimp can be used.

- Large or jumbo shrimp can be used in this recipe. Large shrimp can be used to make simple layered casserole (does not have to be butterflied). Jumbo shrimp can be butterflied and then stuffed with the stuffing.
- Not a fan of crab meat? You can omit it if desired.
- What kind of crackers work best? I like something with structure and flavor such as Ritz crackers.
- The easiest way to make crumbs from the crackers is to pulse them in a food processor or place them into a zip top bag and run a rolling pin over the bag.

- Prep. Preheat your oven to 425. Also, prep a large casserole dish for nonstick.
- Toss. In a large bowl, toss together your shrimp with the olive oil and seasonings.
- Base Layer. Arrange the tossed shrimp on the bottom of your casserole dish. If you have butterflied your shrimp, have the openings on top.
- Stuffing. To make the stuffing, combine together the crab meat, minced garlic, lemon juice, cracker crumbs, melted butter, and parsley in a mixing bowl.
- Layer. Evenly spread the stuffing layer over the shrimp layer. For the butterflied shrimp, you can use a teaspoon to first stuff the shrimp with the stuffing and then use the remaining stuffing as a layer on top.
- Bake. Bake your casserole for 12-14 minutes or until the top layer is browned.
- Set. Let the casserole sit at room temperature for a couple of minutes before serving.
