- Baking Powder.Added for a bit of leavening.
- Butter. Softened to room temperature. If you are using unsalted butter you can add a half teaspoon of salt to your flour.
- Sugar. Regular granulated sugar.
- Vanilla Extract. Added for a bit of flavor.
- Egg. Also at room temperature for optimal blending.
- For the filling and topping you will need powdered sugar and jam.

Tips for making the best holiday linzer cookies.
The sandwich cookie layers that are made in this recipe are intended to be like a shortbread. For this reason, it is important to measure the ingredients well to get the perfect balance of dry to wet ingredients

- Chilling the dough is an essential step for both structure and using the cookie cutters successfully. You can refrigerate your dough for as little as an 15 minutes. Or for up to a few days allowing the dough to get to room temperature before rolling it out.
- Raspberry jam is traditional filling choice for this recipe. Alternative choices include peach, strawberry, blueberry, rhubarb, or even chocolate
- Blanched almond flour is used in this recipe as it does not contain any almond skin, which can affect the texture of the cookie. Make sure that your almond flour is blanched for best results.
- Cookie cutters are used to make the cookie tops and bottoms a uniform size. A smaller cookie cutter is then used to cut on the centers from the top cookies.
- As long as you have a large cookie cutter for the cookie and a smaller cookie cutter for the centers, you can use the cutters of your choice.
- The cookies are done baking when they are browned on the edges. They may seen soft in the centers but, should set while they cool on the warm baking sheet.
How to make Air Fryer Holiday Linzer Cookies
Prep Time: 30 minutes plus chill time .
Air Fry Time: 6-8 minutes .
Servings: 24, depending on the size of your cookie cutter .
- Dry Ingredients. In a medium bowl, use a whisk to combine together the flours and the baking powder.
- Wet Ingredients. Using a large mixing bowl and a beater attachment, beat together you butter and sugar until smooth and creamy (this can take a few minutes). Then add the egg and vanilla extract and beat until combined.
- Combine. Add the dry ingredients from the first bowl to the mixing bowl and mix until combined, soft and pliable (not wet or sticky).
- Refrigerate. Cover the dough with plastic wrap and refrigerate for at least an hour to firm up.
- Roll. Place your cookie dough in between two sheets of parchment paper or on a lightly flour dusted workspace. Then roll out your dough to about ¼-1/8".
- Prepare. Preheat your air fryer to 325°F and place a liner in the basket.
- Cut. Use a cookie cutter to cut out bottom and top cookies (even number cookie of cookies) that are the same size. Then use a smaller cookie cutter to cut out the centers from the top cookies.
- Air Fry. Place equal amounts of top cookies and bottom cookies into your air fryer, leaving room between the cookies. Then air fry the cookies until they are golden brown (about six to eight minutes). Carefully remove the cookies from your air fryer and allow the cookies to fully cool on a cooling rack.
- Dust. When the cookies have cooled, generously dust the tops of the cookies with a hole in the center with your powdered sugar.
- Assemble. Use a tablespoon to spread jam over the inside of the cookies that do not have a hole cut out in the center. Then top each of the jam covered cookies with additional powdered sugar.
Expert Tip👉 To limit the jam from spreading outside of the cookies, only spread the jam in the center of the cookies. When your place the top cookie over the jam it should spread in place.
How to store Holiday Linzer Cookies
It is best to serve the filled cookies as soon as possible. Unassembled, these cookies can be stored in an airtight container for up to a week at room temperature or in the freezer for up to a month. Assembled cookies can be stored at room temperature for up to three days.
