    French bread was used in making my casserole as it is a dense and firm bread. Alternative kinds of bread that could work in this recipe include brioche or challah as they can hold up to the moisture from the eggs and milk.

    1. Blueberries work great in this recipe. Other berries, such as frozen raspberries or blackberries, could also work with or instead of the blueberries.
    2. You can prepare this recipe in your slow cooker and then refrigerate it overnight. I would let the slow cooker sit at room temperature for a few minutes if it is really cold.

    How to make Crockpot Blueberry French Toast Casserole

    Prep Time : 10 minutes .
    Bake Time 3-4 hours .
    Servings : 8 servings .

    1. Prepare. Prep your slow cooker as desired, Nonstick spray or liners can work.
    2. Bottom Layer. In a medium bowl, use a whisk to combine together the brown sugar, cinnamon and melted butter until it takes on a 'sandy' appearance- image 2. Then evenly spread HALF this mixture over the bottom of the slow cooker.
    3. Bread. Over the brown sugar layer, place the bread so that it covers the bottom of the slow cooker. You can cut the bread as needed to fill in any gaps.
    4. Blueberries. Sprinkle about a tablespoon of the remaining brown sugar mixture over the bread. Then top this with a half cup of the blueberries and then a layer of bread slices. Repeat this step until all of the berries have been used- image 3.
    5. Custard. To make the custard layer, whisk together the eggs, milk and vanilla in a large bowl until well blended. Then pour this mixture over the the ingredients in the slow cooker so that it can soak into the bread slices.
    6. Chill. Cover and refrigerate your blueberry casserole or up to overnight.
    7. Slow Cook. Slow cook your casserole on low until done. Your casserole is done when the bread is tender and the custard layer is set (three to four hours, depending on the size of your slow cooker).
    8. Serve. When your casserole is done slow cooking, let it set for about 15 minutes before serving. This will help make it easier to serve.

    Expert Tip 👉 Cooking times can vary depending on the size of your slow cooker. You can insert a toothpick and if it comes out clean (no runny egg) it should be done. You can also run a rubber spatula around the edges of the slow cooker to loosen it from the sides of the slow cooker and assure that it has set.

    Once your French toast casserole has fully set, it should be stored in an airtight container. When properly stored and refrigerated, this casserole should keep for up to a few days when refrigerate or a few months when frozen.
