    • Potatoes. Your potatoes should be cut into bite-sized (about two inches) pieces. Medium potatoes were used to make my dinner.
    • Carrots. Using baby carrots makes this recipe even easier to make.
    • Onion. Your onion should be chopped into small pieces.
    • Garlic. The garlic should be minced or cut into small pieces.
    • Chicken Broth. Chicken broth adds bot moisture and flavor to this dish.
    • Olive Oil. Adds both flavor and moisture to this dish.
    • Seasonings. Thyme, rosemary, paprika, salt and pepper were used in making my chicken and potatoes.

    Chicken breasts were used to make my slow cooked chicken. You can alternatively use boneless, skinless chicken thighs.

    1. While my chicken dinner was made with potatoes and carrots, you can use other ingredients such as corn or beans (slow cooking times can vary).
    2. Marinating your chicken for as little as 10 minutes or overnight (refrigerated) both tenderizes the chicken and adds flavor to it. You can place it into a zip top bag with the olive oil and seasonings to do so.
    3. Take the heat up a notch to make this even more authentic. You can add pepper flakes or hot sauce to spice up the sauce.
    4. A large crockpot was used to make my chicken. Depending on size of your slow cooker, you may need to adjust the ingredients to fit.
    5. There are a lot of different seasonings used to give this dish a variety of flavors. Feel free to adjust the seasonings to your likings.
    6. Remember, according to the USDA, chicken is done cooking when it reaches a minimum internal temperature of 165 throughout. It should no longer be pink and the juices should run clear as well.

    How to make this Crockpot Chicken and Potato Dinner.

    Prep Time: 15 minutes .
    Slow Cook Time: 4-6 hours on low .
    Servings: 4 servings .

    1. Start by placing the potatoes and carrots into your slow cooker. Then stir in the onion and garlic . Image 2.
    2. Pour the chicken broth over the ingredients in the slow cooker and stir.
    3. Place the chicken on top of the ingredients in the slow cooker and then drizzle the oil over the chicken. Then add the seasonings on top. Image 3.
    4. Cover your slow cooker and cook on low heat for 4-6 hours or until the chicken is tender and the potatoes are cooked through.
    5. Once your chicken is done cooking, you can carefully remove it.
    6. If desired, you can use two forks to shred the chicken or you can simple serve the chicken breasts whole over your cooked vegetables.

    Expert Tip 👉 Avoid overcooking your chicken as it will turn out dry and not as appetizing. You can set the slow cooker on warm if needed.

    How to store Crockpot Chicken

    Once the chicken has fully cooled, you can store in an airtight container (alone or with the other ingredients if not frozen). When properly stored, this chicken should keep for up to five days when refrigerated or up to six months when frozen (you can thaw it in the refrigerator before reheating it).
