- Chicken. Boneless chicken thighs were used to make my chicken.
- Olive Oil This is used to 'sear' the chicken thighs to make them perfectly golden brown.
- Lemon Juice. Freshly squeezed lemon juice is preferred.
- Lemon Zest.. Freshly zested lemon (you can use the lemon that you used for juice).
- Lemon Pepper Seasoning . A small amount makes this recipe even better.
- Chicken Broth. This is the liquid that the chicken is slow cooked in giving it moisture.
- Seasonings: garlic powder, onion powder, thyme, rosemary, salt, and pepper were used in my chicken.

Tips for making the best slow cooker lemon chicken.
While chicken thighs were used in making my chicken, you can use the part of the chicken that you prefer.
Chicken breasts also work well in this recipe.

- Cooking your chicken with the skin on helps to keep the moisture inside. You can remove the skin before serving.
- Freshly squeezed lemon juice is essential the success of this recipe. Bottled versions sometimes have additional ingredients added and usually do not have the bright flavor that freshly squeezed juice has.
- Make this recipe into a meal in itself. You can add potatoes or another vegetable to the slow cooker, making adjustments as needed.
- Marinating your chicken for as little as 10 minutes or overnight (refrigerated) both tenderizes the chicken and adds flavor to it.
- To make a creamy sauce for your chicken, in a small bowl, use a whisk to combine together cornstarch and some of the broth (1:1) to create a slurry. Then add the slurry back to the slow cooker and cook until the sauce thickens.

Slow Cook Time: 4-6 hours .

- Make the marinade. Place your chicken in a large zip top bag or shallow baking dish. In a small bowl, use a whisk to combine together the lemon juice, lemon zest, lemon pepper seasoning, remaining seasonings and the broth. Then pour the marinade over the chicken so that the chicken is fully covered by the marinade. Marinate for a minimum of 15 minutes to overnight (refrigerated).
- Sear the Chicken. In a large skillet over medium heat, heat your olive oil for two minutes. Cook the chicken on each side for four to six minutes or until golden brown. Transfer the chicken to your slow cooker .
- Deglaze the pan. Pour the marinade left in the bag or baking dish into the pan and bring it to a boil. Carefully use a wooden spoon to scrape at the bottom of the pan to deglaze it. Then pour the marinade over the chicken in the slow cooker.
- Slow Cook the Chicken. Slow cook your chicken on low for four to six hours or until done.
- Serve. You can serve your chicken over rice, noodles, or with a tasty salad on the side.
Expert Tip 👉 Deglazing the pan helps to release the concentrated and flavorful residue (fond or sucs) from the cooked chicken out to create a delicious sauce for the chicken to slow cook in.
How to store crockpot chicken.
Once this chicken has fully cooled, it should be stored in an airtight container.
When properly stored, this chicken should keep for up to four days refrigerated or frozen for up to a few months.
