    What is Reuben Dip ?

Reuben Dip is a reuben sandwich in dip form- a cheesy dip made with corned beef and sauerkraut.

I like that recipe is a dump and slow cook recipe that tastes amazing..

Have you tried my recipe for Cheesy Sheet Pan Nachos?

Made on a base of fresh tortilla chips and topped with a creamy homemade cheese sauce, those nachos are mouthwatering crunchy and full of spicy, savory, and cheesy goodness. Both this recipe for reuben dip and that recipe for nachos would go great when served together.

To make this recipe you will need sauerkraut. You can find sauerkraut here.

Ingredients needed to make Reuben Dip in a slow cooker.

    • Cream Cheese. Cut into cubes and then softened to room temperature.
    • Mayonnaise Full fat mayo will help make this creamy.
    • Ketchup. Regular ketchup works fine.
    • Sweet Relish. Adds a nice flavor balance.
    • White Vinegar Helps with the flavor and texture.
    • Sauerkraut You sauerkraut should be drained.
    • Corned Beef. Cooked and chopped small.
    • Swiss Cheese. Freshly grated or chopped small.

Tips for making the best Reuben Dip

Make this recipe even easier by using thousand island dressing. Simply omit the ketchup, relish, and cut the mayo in half.

    More helpful tips for you.

    1. You can also make this recipe easier by using sliced deli corned beef that you have chopped small.
    2. To take down the flavor of the sauerkraut rinse it briefly under cold water before draining.
    3. Use full-fat cream cheese for the creamiest texture.
    4. Take this recipe up a notch by adding a few drops of hot sauce or a bit of horseradish.
    5. Make sure that your sauerkraut is well drained as the liquid can affect the texture of this creamy dip.
    6. Make this into a Baked Reuben Dip: Instead of the crockpot, bake the dip in a 9x9-inch baking dish at 375°F (190°C) for 20-25 minutes until bubbly.

How to make Slow Cooker Ruben Dip.

    Prep Time: 10 minutes .
    Slow Cook Time: 2 ½- 3 hours .
    Servings: 10 .

    1. Prepare. I like to give my slow cooker a quick spray with nonstick or use a slow cooker liner for a quick and easy clean-up.
    2. Combine. In a medium mixing bowl, combine together the cream cheese, mayonnaise, ketchup, and the white vinegar, mixing until combined. Then stir in the drained sauerkraut, sweet relish and the chopped corned beef.
    3. Slow Cook. Transfer the ingredients to your prepared slow cooker and cook on low for two and a half to three hours, stopping to stir every half hour so that the ingredients can evenly slow cook.
    4. Serve. You can turn your slow cooker to warm and continue to stir as needed while serving.

Expert Tip👉 This dip can be prepared in advance, covered, and refrigerated overnight. Allow the crock to sit at room temperature (about 10-15 minutes) and slow cook as indicated.
